Masque, an ingredient-driven restaurant started by Aditi Dugar, is tucked away in one of Mumbai's former textile mills. Head Chef Varun Totlani is in charge of the kitchen. The restaurant's 10-course chef's tasting menus, which are the first of their type in India, combine innovation with tradition. The menus are based on ingredients that are gathered from local producers, farmers, and foraging expeditions, and they change with the seasons.
